Sundried grapes make me thing of Christmas. Maybe it is because of a typical Christmas cake form my hometown. In any case any cake with sundried grapes make me thing of Christmas.
Today Giovanni had only half an hour nap in the morning even if he was very tired. I know that cook is something that really fascinate him so I put him in his sit and we went in the kitchen to bake something sweet. So here there is my first recipe made with ingredients that you can easily find in Kenyan’s supermarkets.
I call them St. Lucy’s rolls because I made today on the feast of this Saint. I googled a bit to discover what is the meaning of the feast. St. Lucy. She was a martyr who was helping early Christians giving them food in the catacombs. Because of this she is celebrated as a kind of Father Christmas and in some countries (most in Scandinavia) she brings gifts to children.
So to make this delicious rolls you need:
350 grams multi purpose flour
150 ml milk
75 grams brown sugar
75 grams margarine
15 grams baking soda
Sundried raisins (if you don’t like it try with some chocolate)
First of all put a bunch of sundried raisins in a small bowl and cover them with water.
In a pan melt the margarine then add milk and cook it until it boils. Cool it and put in a bowl with backing soda then add flour and sugar. Mix well up to when the dough will be soft but not sticky. Let it rest and grow for 40 minutes. Then divide the dough in small rolls that you will coil; decorate adding on top some sundried raisins. Leave it for 40 minutes then bake in the owen for 10 minutes at 210°.
Et voilat. Your small St. Lucy’s rolls are ready. You can eat them warm, leave in a closed box for one week or freeze them once they are cooked.
We just eat almost all of them this evening, with a hot chocolate mug.
